RECIPE | delicious chocolate chip cookies with a hint of walnuts!

I've been trying to bake healthy recently but sometimes a cookie just taste so much better when it's baked with butter! I decided to jump off the health wagon for a weekend and bake some delicious chocolate chip cookies!


Sorry this post won't have as many photos as other recipe posts but let's be honest, you probably don't want to see me post pictures of cinnamon getting added to the flour. All the steps are pretty standard in baking so I'll save you the trouble of scrolling through endless photos of flour in a bowl.
This recipe makes around 20 cookies

Ingredients:
  • 1/4 cup rolled oats
  • 1 1/8 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1/2 granulated sugar
  • 1/2 tsp vanilla
  • 1/4 tsp lime juice
  • 1 egg
  • 1/2 semi sweet chocolate chips
  • 1/4 chopped walnuts
Method:

1. Using a blender or a food processor ( I used my magic bullet) grind up the oats until it's the same consistency as the flour. Combine the ground oats with the flour, baking soda, salt and cinnamon and set aside.
2. Cream the butter, sugars, vanilla and lime juice in another bowl with a hand mixer until everything is combined and smooth. Add in the eggs and continue to mix.
3. Slowly pour in the dry mixture into your met mixture and blend well until everything is mixed together.
4. Fold in the choocolate chips and walnut by hand in the dough and chill in the fridge overnight. (I know it's tempting to eat the cookies right away but chilling it is important!)

5. The chilled dough will be very hard when it first comes out of the fridge so I let it sit for 10-15 minutes so it's easier to work with.


6. Preheat your oven to 350 degrees and scoop the dough onto an ungreased baking sheet. Depending on the size of your cookie bake it between 12-15 minutes or until a light golden brown .
