We told you about our love for SummerFresh's wide range of hummus when we made a visit to their headquarters last year. This time around, though our post is to show you how hummus can be used in a super quick and easy recipe that isn't necessarily using hummus in the typical form of dips and spreads. Instead, I decided to use the hummus as a sauce to one of my all time favourite sesame noodle recipe! Introducing Monica's Roasted Garlic Hummus Sesame Noodles! Roasted Garlic has to be my favourite hummus amongst the other delicious flavours just because I'm a huge fan of it - yes it gives me garlic breath but... come on... let me live a little ;)
Here's a super easy recipe that literally took me less than 30 minutes from start to finish. It's a light and delicious meal idea that is still foodporn worthy as well as being drool worthy.
Here's a super easy recipe that literally took me less than 30 minutes from start to finish. It's a light and delicious meal idea that is still foodporn worthy as well as being drool worthy.
Ingredients:
3/4 cup of Summer Fresh roasted garlic hummus (I used 3 packets from the 4 pack)
1/4 cup of chicken or vegetable stock
2 tablespoon of rice vinegar
2 tablespoon for soy sauce
1 tablespoon of sesame oil
spaghettini or angel hair pasta
1/2 cup of sesame seeds, toasted
4 little bundles of scallion, chopped
a handful of sliced shitake mushrooms (or any other mushroom)
1. Boil water and cook the spaghettini for about 5 minutes. Don't overcook it as it's a cold dish, al dente will work the best. Once cooked, drain and leave on the side.
Leave for 10 minutes to cool.
3. Last step already, add the sesame seeds, scallions and mushroom with the noodles on a serving plate. And, there you have it! Bon Appetit!
