Happy Cinco de Mayo! We love that we can can celebrate it on a Friday this year! What better way to celebrate than with taco night with friends and Old El Paso?
We love entertaining but with a big group it can be daunting and tiring to cook and clean for so many people. With the help of Old El Paso, we were about to cut down the prep and clean time to spend more time with our friends!
Taco nights always seem to be the easiest because as the hosts, you can just prep all the ingredients and everyone can make their own plates! And of course, who doesn't like guac, salsa, meat and cheese?
This time around, we decided to go for beef and shrimp tacos to please all of our guests (one of them is a pescetarian). For sides, we decided to make guacamole, Mexican style corn, taco bread sticks and a five-layer nacho dip.
We know bread sticks aren't really considered Mexican cuisine, but we loved the idea of making taco style bread sticks and used the Old El Paso mild taco seasoning to season the beef with a little bit of onion and garlic. It didn't take long to make and it was definitely a crowd pleaser.
The thing that we love about using Old El Paso products is the variety it gives us in the kitchen. They have amazing recipes on their websites but you can also use their products for so many other things! We used the Old El Paso refried beans as one of the layers of our nacho dip and it turned out so well! The other layers include: sour cream, salsa, chopped tomatoes, green peppers and then topped with cheese.
We absolutely LOVE Mexican street corn and will order it every chance we get. But it can get a little messy eating it in public. We decided to make the same dish sans cob. We cut up the corn first before cooking and tossed it with cilantro, feta cheese and green onion. It's definitely more dinner party friendly and still tastes great.
