Noodle salads are one of my favourite dishes to make at home. They are easy to prepare and the ingredient options are limitless! All you need are fresh vegetables, some noodles, and protein. Soba is my go-to along with shrimps or chicken. This time around, I decided to try the pre-cooked and ready to eat salmon from our friends at The Saucy Fish Co.
The Saucy Fish Co. offers a variety of fish and sauce pairings an available at all Superstore in Canada. The pre-cooked and ready to eat products are perfect for those that don’t have a lot of time to cook but still wants to enjoy a savoury meal.

Ingredients:
Tomato & Chili Chutney Tremendous with Roasted Sweet Chili Atlantic Salmon Fillets from The Saucy Fish Co.
Soba Noodles
Spinach
Carrots
Cucumber
Green onion
Bean Sprouts
Hot peppers
Lime
Instructions:
1. To prepare all the vegetables for the noodle salad, chop the green onions & hot peppers; julienne the carrots and cucumber; wash & drain the sprouts and spinach.
2. Boil water for the noodles. Cook noodles according to package instructions but typically 5 minutes in boiling water will cook the soba. Don’t forget to rinse in cold water!
3. Re-heat The Saucy Fish Co. salmon on medium-high heat
4. Sink The Saucy Fish Co. sauce in hot water for 5 minutes
5. Place the soba noodles in a bowl, add all vegetables and top with salmon fillet. The finishing touch? Drizzle the sauce.
